1/2 c. milk
2 eggs
2 c. flour
plain dry breadcrumbs or cornflake crumbs
salt and pepper (to taste)
1 lb. boneless, skinless chicken strips
oil for skillet

Sauce:
1/2 c. peanut butter
3 T. soy sauce
3 T. brown sugar
1/4 c. water
1 tsp. honey (optional)

Directions:
Directions:
Stir milk and eggs together and set aside. Mix together flour, breadcrumbs, salt and pepper. Dip chicken pieces into milk mix; let soak. Next, coat chicken pieces with flour mix; set aside. Heat oil in heavy skillet. Fry chicken until browned and cooked through. Set aside until cooled enough to slice thinly, or leave chicken fingers whole for dipping.

For sauce: Combine sauce ingredients into a pot. Stir frequently until mixture comes to a boil. Remove from heat and continue stirring until smooth. Add water, 1/2 tsp. at a time; if too thick for your preference, add more water. Mix well and pour over sliced chicken or dip chicken pieces into sauce.
