1/2 Block Velveeta
1 can Ro-Tel
2 Servings Brown Rice
1/2 cup Fresh Cilantro, chopped
3 or 4 Chicken Breast
1/4 cup Taco Seasoning
1/2 stick Butter
Olive Oil

Directions:
Directions:
Preheat oven to 350. Melt butter in pan (pyres works best). Place chicken breast in pan over butter. Sprinkle taco seasoning over chicken, then drizzle with olive oil. Bake for 25-30 minutes.
Prepare brown rice as instructed. Melt Velveeta and Ro-tel together.
Plate rice, pour cheese mixture over rice, top with chicken, sprinkle with cilantro
