1 c. sugar

1 qt milk or half-and-half
¾ c. sugar
⅛ tsp salt
1 tsp vanilla
6 large eggs, well beaten

Directions:
Directions:
For sauce: Put 1 cup of sugar in pan and cook over low heat, stirring until melted and golden brown. Pour into mold and spread over the sides. This will harden, but will soften again when flan is cooking.

For custard: Mix the milk, sugar and salt; boil vigorously for 10 minutes. Add mixture to the eggs, a little at a time, beating constantly. Continue beating for 3 minutes while mixture cools. Stir in vanilla. Set oven to 300º.
Pour mixture into mold and cook in waterbath (large pan half filled with hot water) 1½ hours, or until knife inserted in flan comes out clean. Chill in refrigerator. Unmold on dish with a raised edge, to hold sauce.
