Ingredients: Blackeye peas 16 oz bag 1 onion coarsely chopped 2 red bell peppers coarsely chopped 1/2 to 1 can corned beef 4 hard boiled eggs; slices or chopped 1/2 cup vegetable oil 1/8 - 1/4 tsp curry, thyme, cayenne pepper Chicken and/or beef broth for blending Salt to taste
Foil or steaming bags Cooking spray

Directions:Soak blackeye peas until soft and outer skin easily removed. Should have only white beans left
Place ingredients in blender; 1/2 cup shelled beans, handful onion and bell pepper, enough broth to blend until smooth and consistency of cake batter. Pour into large mixing bowl. Repeat until all beans, bell pepper, and onion has been blended.
Add spices and oil to mixture in bowl. Stir well.
Crumble corned beef into mixture and stir well. (Alternative method is to add during blending process)
You will need foil packets or steaming bags for cooking the moi moi.
Heat water in double boiler. Spray inside of packets or bags with cooking spray. Fill bags 1/2 full and add bits of egg. Tie off well and place in top of double boiler. The bags of mixture should be placed snuggly against each other. Cover and steam cook until mixture in bags is set (firm). Approximately one hour.
Let cool before serving as will continue to firm. |
