1 chicken chopped into 3 inch pieces
1/2 onion
1 red bell pepper
1 can diced tomatoes
2 chicken bouillon
2 beef bouillon
1/8 - 1/4 tsp curry powder, cayenne pepper, thyme
2 tblsp oil

Directions:
Directions:
Heat oil in large soup pot
Add chicken pieces and brown slightly
Place other ingredients in food blender; add water and blend until smooth
Add to oil and chicken in pot
Bring to a boil
Leave pan uncovered and continue to cook at a low boil until liquid is reduced by half. Add water if too thick
May add spinach or other leafy green vegetable if desired

Serve over rice
