1 cup flaked coconut 1 cup sugar 1/2 cup butter melted (or margarine) 1 egg beaten 1 teaspoon vanilla 12 slices of white bread
In bowl combine, coconut, sugar, butter, egg and vanilla. Mix well. Spread over each slice of bread. Place on ungreased baking sheet. Bake at 350 deg. for 15-20 minutes or until lightly browned. So simple, but so good.
Caroline got this recipe from a collegue at Holliday Elementary School where she taught. Caroline suggests you may want to trim off the crusts if you want and cut into smaller pieces for a reception or cut the bread into shapes before baking. It is really simple and delicious - good anytime - not just for breakfast.
