1 cup plain flour
1 tsp. salt,( garlic or kosher)
½ tsp. pepper
1( 2½ to 3-lb)frying chicken, cut up, or ready cut.
½ cup vegetable oil or peanut oil

Directions:

Wash chicken thoroughly, lay onto towel to drain
In a bag, (I use plastic or brown paper bag) mix flour, salt, and pepper and mix well. Add chicken pieces, 2 to 3 at a time.
roll or shake to coat pieces well, rest on a paper towel.

Preheat oil in cast iron skillet or pan over medium-high heat on stove or 350º in an electric skillet.
Fry chicken for 30 to 40 mins. uncovered. Turn chicken 4 to 5 times during cooking for even browning.

Stick a toothpick into the thick part of breast and thigh. liquids should be clear. Lay each piece onto a rack to drain.

The night before you fry the chicken you can soak chicken in buttermilk (cover and refrigerate) you should wash first.
