1/2 cup flour
2 cups shredded zucchini
3/4 tsp. salt
1/2 tsp. pepper
2 eggs separated

Directions:
Directions:
In small bowl mix flour, zucchini, salt, pepper and egg yolks. In another bowl, beat egg whites till stiff but not dry. Fold into zucchini mixture. Drop by heaping tablespoons into about 1/4" oil in skillet. Brown on both sides.
