3 medium potatoes
1/2 C chopped onion
1C water
1 (8oz) can creamed corn (she uses 15oz)
1 (11oz) can whole kernel corn (she uses 15oz)
1 (12oz) can evaporated milk
1T butter
1/2t. each of salt & pepper

Directions:
Directions:
Cook potatoes and onions, covered, in 1C water for 8-10 minutes, stirring once or twice. Add other ingredients. Bring to a boil, lower heat and simmer 5-8 minutes to mix flavors.

This recipe is from Linda Cornwell. She made it for me as child and I still love it. I brought this dish to a potluck once and everyone raved about it. It made me laugh because it’s such an easy meal. Several people said it reminded them of their childhood. Maybe it is the evaporated milk? Who knows. But this is a winner.
