Puree in blender or processor, then set aside:
2 Tomatillos
1-2 Cloves of fresh garlic
1 small HOT chili pepper

Next, core and squeeze seeds from 3# fresh RIPE Roma (pear) tomatoes. Process or chop coarsely. Toss with at least 1 Tb. salt and allow to sit while chopping remaining ingredients.

Chop the following to desired coarseness:
1 medium/large onion
1 hot banana pepper
1 sweet red or yellow pepper

Drain liquid from tomatoes (drink, use in soup, or discard), and then mix with Tomatillos, onions, and peppers. Season with Cumin , more salt, and black pepper to taste. Add one bunch of Cilantro, washed, dried and chopped. Place in glass jar and refrigerate. Keeps about 1 week.
