1 1/2 C. Sugar
1 tsp. Salt
2 tsp. Cinnamon
1 tsp. Ground Ginger
1/2 tsp. Ground Clove
4 large eggs
1 can 29 oz. Pure Pumpkin
2 Can  12 oz. each Evaporated Milk
2 unbaked 9-inch Deep Dish Pie Shells

Directions:

Mix first 5 ingredients in a small bowl.
In a large mixing bowl, beat eggs, stir in pumpkin, and sugar-spice mixture.
Stir in evaporated milk.
Pour into pie shells.
Mom always covered the top with pecans, this makes 2 pies so you can leave one pie with and one without pecans. Do the taste test. Cook for 15 minutes, then reduce temp. to 350 bake 40-50 minutes,  until knife test comes out clean.
Cool on wire rack for up to 2 hours eat, then refrigerate leftovers.

She always baked them for Thanksgiving and Christmas. A couple of years ago, she called and said "oops I forgot the sugar," so she went back and pulled them out half way through cooking and sprinkled sugar all over the tops. They weren't very good that year, but still eatable. She also said not to tell anybody, but we cough on ;)
