"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste

Directions:
Mix all ingredients in 3 1/2- to 6-quart slow cooker. Cover and cook on low heat setting 6 to 8 hours (or high heat 3 to 4 hours) or until carrots are tender. May add cheese--shredded mozzarella, American, or cheddar cheese on top of each bowl of hot soup.

Personal Notes:
Personal Notes:
This is a really hardy and easy soup. It came from Tom Bollinger, a parishioner at Hope UCC. I sometimes use canned carrots if I have an extra can in the pantry. I am more likely to have a can of carrots than raw ones in the refrigerator.
