12 large fresh mushrooms
2 tablespoons butter
1 medium onion chopped
2 ounces pepperoni diced (½ cup)
¼ cup finely chopped green pepper
1 small clove garlic minced
½ cup crushed Ritz crackers
3 tablespoons parmesan cheese
1 tablespoon snipped parsley
½ teaspoon seasoned salt
¼ teaspoon oregano
dash of black pepper
⅓ cup chicken broth

Directions:

Wash mushrooms and remove stems. Finely chop stems. Melt butter, add onion, green pepper, and stems. Cook until tender but not brown. Add cracker crumbs, cheese, pepperoni, parsley, salt, oregano and pepper. Mix well. Stir in broth. Spoon stuffing into caps rounding tops. Place in a pan with a quarter inch of water in the bottom (I use chicken broth instead of water). Bake uncovered at 325º for about 25 minutes.
