Cut off the wing tips from 2-lb of chicken wings and halve the wings at the joints.

In a ceramic or glass bowl, combine:
½ cup plain yogurt
3 tablespoons lemon juice
1 tablespoon Dujon-style mustard
3 cloves garlic, minced
1 teaspoon salt
½ teaspoon dried sage
½ teaspoon dried oregano
Pepper to taste

Toss wings to coat them with the marinade, and let sit in the marinade covered for at least 2 hours or chilled overnight.

In plastic or paper bag, combine ½ cup stale bread crumbs and ½ cup freshly grated parmesan, ½ cup cayenne, and salt and pepper to taste.

Drain wings and shake them a few at a time with the bread crumb mixture, coating them well.

Arrange the coated wings 1-inch apart in a well-buttered shallow baking dish and chill them for 1 hour. Drizzle the wings with melted butter and bake them in preheated oven at 375° for 30 minutes or until they are golden brown. Transfer wings to heated platter. Serves 4.
