3 cups mashed potatoes
1 8oz. package of cream cheese
1 small onion, chopped
2 eggs
2 Tbls flour
salt and pepper to taste
1 can French fried onion rings

Directions:
Directions:
Butter an 8 x 8 square baking dish. Mix all the ingredients together using an electric mixer. Cream together the cream cheese, mashed potatoes, onion, eggs and flour. Beat well. Place in the baking dish and bake uncovered at 325 degrees for one hour. Five minutes before serving, sprinkle 1 can of french fried onion rings over the top and brown.
