6 Baked Potatoes
2 cups cooking oil
5 Slices of Bacon, cooked to crispy and chopped
1 cup shredded Cheddar Cheese
1 Cup Sour Cream
2 Green Onions, chopped

Directions:
Directions:
Preheat oven to 3530 degrees. Clean and wash the baking potatoes and prick with a fork. Rub with oil and place directly on the middle oven rack. Roast for approximately 45-50 minutes until it's soft to the touch, but not over baked. Let cool. Cut the potatoes in half then quartered. Scoop insides out of potato leaving approximately 1/8 - 1/4 ". Heat oil in a shallow pan about 2 inches deep. Fry potatoes until golden brown.

While potatoes are baking, fry up bacon and chop in small pieces.

Add cheese to potatoes and Broil for approximately 1 minute to melt cheese then add bacon and green onions. Serve with Sour Cream.
