A couple racks of baby back or regular cut ribs
Spice Mix (follows)
1 bottle dark beer
Favorite BBQ sauce
Leftover coffee

SPICE MIX:
5 tablespoons onion powder
5 tablespoons garlic powder
10 tablespoons smoked paprika
1 tablespoon freshly ground black pepper
1 tablespoon cayenne pepper
1 tablespoon salt
5 tablespoons mustard powder

Directions:
Directions:
First, remove the membrane on the bone side of the ribs, if not already removed.
Rub generously with spice mix on both sides. You can use any rub you like, but the above is a good one.
Put ribs, bone side down in roasting pan and pour the beer in the bottom of the pan.
Cover with foil and bake about 2½ hours in 325º oven.
(you can do this ahead of time to here)

Mix your favorite BBQ sauce with some leftover coffee to thin.

Start the BBQ and let the coals burn down a little. Baste the ribs with the BBQ sauce and grill on both sides to reheat and get a nice smoky flavor in the ribs.
Serve with more sauce.

This is a great party dish because you can prepare the ribs ahead and just cook them off on the BBQ when ready. They are nice and tender and always a hit.
