2 lb. pork roast (I use the ones from Costco)
1 can corn - drained
1 can black beans (rinsed & drained)
1 can white beans (rinsed & drained)
1 pkg. taco seasoning
1 T. cumin
2 cans Rotel tomatoes
1 can plain tomato sauce
1 can diced green chile
1 med. onion - diced

Directions:
Directions:
Put pork roast in crockpot.
Mix together all other ingredients and put over pork roast.

Cook on low for 8-10 hrs.
Test pork with a fork after 7-8 hours and if it begins to fall apart, pull it from crock pot.
Shred pork with 2 forks and then put back into the crock pot, stirring with the other ingredients.

Serve with tortillas or hard taco shells, cheese, sour cream, lettuce and poblano sauce.
