Pastry for 9-inch single crust

3 medium sized sweet potates

1/4 C butter, room temperature

2 eggs

1/2 - 3/4 C sugar (more if you like a sweeter filling)

1/4 tsp salt

1/2 - 3/4 tsp nutmeg ( to taste since Mama usued that method to determine if there was enough)

1- 2 T flour

1/2 C milk

dash Cinnamon

1/2 tsp Vanilla extract

1. Prepare pastry crust; do not prick.

2. Wash potatoes and place in boiler. Cover with boiling water, cover pan and bring to boil. Reduce heat to gentle boil and cook for 25-30 minutes or until potatoes are softy when pricked with a fork.

3. Drain and peele the potatoes. Cream in 3-quart mixing bowl. Remove fibers. Add remaining ingredients beating until mixture is smooth. Hint: Taste for sweetness and spicees before adding eggs. This recipe can be adjusted to meet family preferences.

4. Pour custard into prepared pastry shell.

5. Bake at 450ºF for 15 minutes or until crust is lightly browned. Reduce heat to a slow (300ºF) and bake 25 to 30 minutes longer.

6. Insert knife in center. Pie is done when knife comes out clean.

7. Let cool before refrigerating.

Although some recipes must be strictly adhered to, cakes,breads, etc., Mama always used the SPOON test for pie filling. It worked most of the time accept when she added bourbon to the recipe. Everyone protested.
