6 oz. pkg. long grain and wild rice mix
¼ c. butter or margarine
⅓ c. chopped onion
1 c. chopped celery
½ c. sliced fresh mushrooms (or 4 oz. jar sliced mushrooms, drained)
⅓ c. flour
1 tsp. salt
Dash pepper
1 c. whole milk or half & half
1 c. chicken broth
2 c. cooked turkey
⅓ c. diced pimiento, if desired
⅓ c. chopped fresh parsley
¼ c. slivered almonds
8 oz. can water chestnuts, chopped

Cook rice mix as directed on package. Meanwhile, melt butter in large saucepan. Add onion, celery and mushrooms. Cook until tender. Stir in flour, salt and pepper. Gradually stir in milk and chicken broth. Cook, stirring constantly until mixture boils 1 minute and is thickened. Stir in turkey, pimiento, parsley, almonds, water chestnuts and rice mixture. Pour into quart casserole.
Bake uncovered 325º for 30 minutes.
