2-3 c. cooked crook neck squash
1 egg, slightly beaten
1/2 stick butter, sliced
1/2 c. mayonnaise
1 tbsp. sugar
1 c. grated cheddar cheese, divided
1 1/2 c. cracker crumbs, divided
Dash of cayenne pepper
Salt and pepper (herbs are optional)

Directions:
Directions:
Put well drained ,hot squash in large mixing bowl. Add egg, butter, mayonnaise, sugar, half of cheese and half of cracker crumbs. Season with cayenne pepper and herbs (oregano is good). Mix all ingredients well. Put into buttered 1 1/2 quart casserole dish and top with remaining cheese and crumbs. Bake at 350 degrees for 20 minutes. Makes 6-8 servings.
