9 eggs
2 cups milk
1 teaspoon salt
1 teaspoon dry mustard
black pepper to taste
2 slices cubed day old bread
1 pound cooked sausage
2 cups grated cheddar cheese

If desired add any of the following to taste
chopped green onions
sliced mushrooms
steamed chopped broccoli
cubed ham instead of sausage

Combine milk, eggs, seasonings and beat. Add sausage and half the cheese. Stir until mixed. Pour mixture over the bread cubes in a greased 9 by 12 baking dish. Sprinkle remainder of cheese on top. Let set over night in refrigerator, covered with foil. Remove foil and bake at 350º for 45 minutes. This may be made ahead and frozen. Let thaw over night on the counter. May take a little longer to cook if not completely thawed. Leftovers may be cut into serving pieces and stored in the refrigerator or bagged and frozen. It is great to reheat for another nice breakfast.
