Ingredients:  
1 lg. cauliflower, washed and cut into florets

Sauce:
4 T. butter
1/4 cup flour
1/2 tsp salt
1/8 tsp pepper
2 c. milk
1 T. Dijon mustard
1 1/2 c. cheddar cheese (mild or sharp)

Topping:
1 c. soft fresh bread crumbs
1 T. fresh chopped parsley
1/2 tsp. ground paprika
1 to 2 T. melted butter

Directions:
Directions:
Boil or steam cauliflower until just tender; set aside. Grease a 2qt. baking dish. Preheat oven to 350º. In med. sauce pan, heat butter over med. heat; stirring constantly for 2 minutes. Add salt & pepper.

Next, gradually add milk and cook the sauce mixture until thick and bubbly. Add mustard and cheese; stirring until cheese is melted. Combine cauliflower with sauce mixture and spoon into prepared baking dish. Combine topping ingredients & sprinkle over mixture. Bake 15 to 20 minutes.
