Carmel Corn

7-10 qts. popped popcorn lightly salted

2 cups brown sugar
1 cup butter
1/2 cup light corn syrup
1 tsp. salt

Bring to a boil over medium heat and boil for 5 minutes without stirring. Remove from heat and stir in:

1 tsp. vanilla
1/2 tsp. baking soda

Keep stirring as it puffs up. Mix well. Pour over popcorn in huge pot or bowl, coating evenly. Distribute into the largest baking pans you have ( I buy those disposable rectangular turkey roaster pans at Winco) and bake at 250 degrees for 1 hour stirring every 15 minutes. (You can bake two pans at once, rotating top to bottom shelf at each stirring.) Store in airtight containers to keep it crisp.
