1 cup hoisin sauce
2 tbls Oriental garlic-chili sauce 1/4 cup rice wine vinegar
3 scallions, chopped
1 tbls grated fresh ginger
1 tbls toasted-sesame oil
2 tbls soy sauce
3-4 pounds of pork baby back ribs salt and pepper
3 tbls sesame seeds

PREHEAT oven to 350 degrees

To make the glaze: In a small saucepan over medium-high heat. Combine Hoisin Sauce, garlic-chilli sauce, vinegar, ginger, scallions, sesame oil and soy sauce. Bring to a slow boil and simmer for 5 min, stirring occasionally. Remove from heat.
Coat a couple of baking sheets with cooking spray and sprinkle ribs (meat side up) with salt and pepper. Let them sit at room temp for 30 min.
Bake for 30 min without glaze.
Remove ribs and glaze on both sides for another 20 min.
Again, remove and glaze both sides and bake another 20 min Remove,
glaze and cook another 30 min.
TOTAL is 100 min of baking
