Ingredients:  
1 pkg. hot Italian sausage links, casings removed & diced
1 bundle fresh leeks, rinsed and chopped
2 cans white beans, (cannelloni, great northern, etc.), drained & rinsed
1 box chicken stock
2 med.- lg. carrots, diced
1 can diced tomatoes
2 -3 garlic cloves, minced

Optional Topping:
parmesan cheese

Directions:
Directions:
In a large soup pot, add diced sausage and brown until almost cooked through. Add carrots and leeks; cook until slightly tender. Add garlic, tomatoes, beans and chicken stock. Simmer for 20 min. Serve topped with cheese, if desired.
