1 lb. bulk Italian sausage
1 c. chopped onion
2 - 4 T. sugar
1 med. green pepper, chopped
2 tsp. salt
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. pepper
1 qt. diced tomatoes
4 c. diced zucchini

Optional Topping:
1/2 c. grated parmesan cheese

Directions:
Directions:
In large pan, brown sausage with onion. Drain fat. Add next 7 ingredients. Cover and simmer for 1 hour. Stir in zucchini and simmer 10 minutes, or more, until zucchini softened. Sprinkle with cheese, if desired.
Makes 2 qts.
