2 boneless skinless chicken breast halves (1 lb)
¼ c. all-purpose flour
3 tbsp. butter, divided
1 c. diced fresh mushrooms (we love mushrooms, so I use one whole container!)
1 c. chicken broth (1 cube)
¼ tsp. salt and garlic powder
⅛ tsp. pepper
⅓ c. shredded mozzarella Cheese (or Aldi’s Italian shredded cheese blend)
¼ c. sliced green onions.

Flatten each chicken breast ½ to ¼ in. Thickness. Place flour in a resalable plastic bag. Add chicken, a few pieces at a time. Seal and shake to coat. In a lg. skillet, brown chicken in 2 tbsp butter on both sides. Transfer to a greased 11x7x2 baking dish. In the same skillet, sauté mushrooms in the remaining butter until tender. Add broth, salt and pepper. Bring to a boil; cook for 5 minutes or until liquid is reduced to ½ cup. Spoon over chicken.

Bake uncovered 375º for 15 minutes. Sprinkle with the cheese and green onions. Bake 5 minutes longer or until the chicken juices run clear.
