1 lb. ground beef
1 (10 ¾ oz.) can creamed corn
1 tbsp. chili powder
½ tsp. ground red pepper
1 (10 ¾ oz.) can fiesta nacho cheese soup
¾ c. chopped green onions
¾ c. chopped fresh tomatoes
1 (4 oz.) can chopped green chilies
16 (6 inch) corn tortillas
4 oz. Monterrey Jack cheese shredded
½ c. sliced black olives
sour cream to garnish

Directions:

Heat oven to 350 degrees.

Cook ground beef, drain fat. Stir in creamed corn, chili powder and red pepper.

In large bowl stir fiesta nacho cheese soup, onions, tomatoes, and chilies until blended.

Cut tortillas in half. In bottom of 9 x 13 pan line with 8 halves of tortillas, cover with half meat mixture, then with half soup mixture. Repeat layers, ending with soup layer.

Bake 20 minutes. Top with cheese and olives. Bake 10 minutes. Garnish with sour cream.
