3 T Butter
1 Small Onion
4 Cups of Frozen Hash Browns
1 lb. of Jimmy Dean Breakfast Sausage
2 1/4 cup milk
8 Large Eggs
1 tsp Salt
1/4 tsp Pepper
1/4 tsp nutmeg
2 T Dijon mustard
8 Cups cubed Sour Dough bread, crusts removed (or any bread of your choice)
2 Cups Grated Cheddar Cheese
2 Cups Freshly grated Parmesan Cheese

Directions:
Directions:
Melt butter in a frying pan. Add the onion and sauce over medium heat until soft (about 5 minute). Add the Hash Browns and break apart. Saute until soft (about 5 minutes).

In a second frying pan, saute sausage (or crumble pre-cooked Jimmie Dean). Combine milk, eggs, salt, pepper, nutmeg, mustard and blend.

To Assemble:

Spray a 9 x 13 Baking dish with Pam baking spray.. Spread the onions and hash browns evenly at the bottom of the greased dish. Place th bread cubes evenly on top of the hash browns. Layer with sausage as third lawyer. Pour the milk and egg mixture on top. Add the parmesan cheese then top with cheddar cheese.

Bake at 350 degrees for 45-50 minutes.
