Belgium Waffles Recipe

Waffles:

4 Eggs separated
1/2 tsp vanilla
3 T melted Butter
1 cup flour
1/2 tsp salt
1 cup milk

Blueberry Sauce:
1 Cup Water
1 Pint Blue Berries
3/4 Cup Sugar
1 T Cornstarch
1/8 tsp salt
1 tsp Lemon Juice

Waffles:

Beat egg yolks until light yellow. Add vanilla and butter. Combine flour & salt. Beat well. Beat egg whites until stiff and fold into batter until just mixed.

Spray the inside moldings of the Belgium Waffle maker with Pam spray. Pour batter into center of waffle maker just until you can no longer see the waffle make lines, Close lid. Cook for approximately 2 minutes or until waffle falls away from waffle maker. Flip over and repeat baking for another 1-2 minutes.

Blueberry Sauce:

In a 2 quart pan over medium heat, heat water to boiling. Add blueberries and return to boil. Meanwhile in a bowl, combine sugar, cornstarch & salt, stir into blueberries. Cook until thick stirring constantly. Remove from heat and add lemon juice.
