8 Slices of Bacon
2 Cups 1/2" Cubed Red Potatoes
1/2 - 3/4 Cup Chopped Onions
1 Cup Sour Cream
1 1/4 Cup Milk, 1%
1 Can Cream of Chicken Soup
1/4 tsp Pepper
1/4 tsp Thyme

Directions:
Directions:
In a 3 Qurt sauce pan, cook bacon over medium heat for 5 minutes. Add potatoes and onions. Continue cooking until potatoes are tender (20-25 minutes). Add remaining ingredients. Continue cooking, stirring occasionally until heated through. Top with chopped green onions & cheese.

Can be doubled!
