Wash chicken with lemon.
Cut chicken into bite size pieces. Then season with onion, bell pepper, garlic, black pepper, all purpose seasoning and curry powder. (Curry will leave nails yellow, so use a pair of gloves or spoon to rub seasoning in).
Cut ¼ of the potato and dice into small pieces then add to chicken. Let it sit for 1 to 1½ hours.
Place oil into a pot. Make sure it is very hot. Then remove seasoning from chicken and place into oil (put flame to medium).
Stir occasionally for 8-10 minutes. Add small amount of water to chicken so that it won't stick to the bottom of the pot.
After 10 minutes, place remaining water, butter and seasoning to chicken. Put to boil for 15 minutes. Make sure the water covers the chicken. Stir occasionally.
Wash carrots, then slice diagonally. Slice remaining potato and add to chicken. Turn flame to low.
Cook until potatoes and carrots are tender. Serve over steamed white rice.
