1 package cole slaw mix
2 green onions, chopped
¼ cup sunflower seeds
¼ cup slivered almonds, toasted if desired
2-3 teaspoons apple cider vinegar (or honey ginger flavored balsamic vinegar if available)
¼ teaspoon pepper
2 tablespoons sugar
1-2 tablespoons oil (include a small amount of gourmet roasted sesame olive oil if on hand)
1 package Oriental flavored ramen noodles
optional: cut up grilled chicken or rotisserie chicken, if desired to make this an entrée salad

Mix ramen noodle flavor packet with oil, vinegar, pepper, and sugar. Add dressing and onions to cole slaw mix, stir together and chill. Crush up ramen noodles and add to mixture along with sunflower seeds and toasted almonds. Top with chicken, if desired. Serve immediately.
