Chile - Potato Soup Recipe

Ingredients: 5 lg potatoes cut into bite sized cubes - (preferably not russets) 1 can chopped chiles 1 med onion 1 garlic, clove 1 15 oz can tomato sauce Vegetable oil or bacon drippings 1 qt chicken broth (water may be used) Cubed cheese (like pepper jack, muenster or cheddar) Diced jalapeños (optional as garnish)

Directions:Heat a couple tablespoons of bacon drippings or oil in Dutch oven. Sauté onion and garlic for a few minutes. Add cubed potatoes and stir until slightly browned (about 5 minutes). Add green chiles and stir (about 5 minutes). Add the broth or water and tomato sauce. Season with salt and pepper. Simmer covered until potatoes are tender (approx 30 minutes).
To serve, place cubed cheese and diced jalapeños in bottom of soup bowls. Ladle hot soup over the cheese/jalapeños and serve after cheese has melted for a few minutes. |
