2 (2 to 3 lb) fryers, cut in serving pieces
6 Tbsp flour
1½ tsp salt
½ tsp pepper

Directions:
Directions:
Toss chicken pieces in paper bag containing flour, salt and pepper. Spread on rack to dry coating.
Heat oil (about ½") in heavy iron skillet. Add chicken and brown lightly on all sides, about 20 minutes.
Reduce heat; cover tightly and cook slowly until tender, about 20 to 30 minutes. Turn pieces for even browning.
Uncover the last 10 minutes to recrisp skin.

Gravy: Remove all but 3 tbsp. of fat; add 3 tbsp. flour. Blend thoroughly, add 2 cups milk and season to taste. Simmer 5 minutes.

Grandma was noted for her fried chicken dinners with mashed potatoes and gravy, green beans with bacon and a relish tray. Of course, there was always apple pie for desert!!
