1 Tbsp wine vinegar or Balsamic vinegar
1 1/2 tsp very finely minced shallot
1/2 tsp mayonnaise
1/2 tsp Dijon mustard
1/4 tsp salt
3 Tbsp extra virgin olive oil

Directions:
Directions:
Combine vinegar, shallots, mayonnaise, mustard, salt and pepper to taste in a small glass bowl. Whisk until milky in appearance. Then slowly drizzle in the oil whisking constantly. If oil starts to pool on the edges stop adding oil and whisk to combine. Then resume adding oil and whisking. Vinaigrette should be glossy and slightly thickened with no pools of oil. on surface.
Variations: you can add 1 Tbsp minced fresh parsley or chives and 1/2 tsp minced fresh thyme, tarragon, marjoram or oregano to vinaigrette just before use.
This makes enough to dress 8 -10 cups of lightly packed greens.
