1 stick butter
4 cups sliced yellow squash
1 chopped onion
2 eggs
1 cup grated cheddar cheese
1 cup milk
salt
pepper
1 stick ritz crackers (crushed)

Directions:
Directions:
Preheat oven to 350.

Melt half stick of butter in skillet over medium heat. Add squash & onion & cook until tender. In a large bowl, lightly whisk eggs. Add cheese & milk & stir until well combined. Add squash & onions & stir well. In separate bowl, melt remaining half stick of butter & toss in cracker crumbs. Spray 9x13 pan with cooking spray. Pour squash mixture into pan. Top with crushed, buttered crackers. Bake 45 mins or until it no longer jiggles in the center.
