3 eggs
1 1/4 cups honey
1 1/2 cups white sugar
3/4 cup vegetable oil (do not use evoo)
1 1/2 tbsp vegetable oil
1 1/2 tsp baking soda
1 1/2 heaping tsp cocoa
1 1/2 heaping tsp baking powder
1 1/2 heaping tsp cinnamon
1 1/2 cups coffee, brewed at double strength (2 tbsp coffee for every 6 oz water)
3 1/4 cups flour

1. Mix all ingredients in mixmaster bowl. Beat 5 minutes. Preheat oven to 375ºF. Pour cake mixture into ungreased round cake pan with hole in middle and bake for 1 hour. Turn pan halfway around at the 30 minute mark. Test with toothpick after an hour to make sure cake is done. Remove from oven, let cool completely before trying to take cake out of pan. Dust with icing sugar before serving.
