1 unbaked pie crust
3 beaten eggs
1 C sugar
tsp freshly grated nutmeg
C flour
4 C rhubarb (about 1 slices)
1 T cold butter

Directions:
Directions:
1) Form pie crust and set aside.
2) Beat eggs; combine sugar, nutmeg, & flour. Beat lightly into the eggs; stir in rhubarb (be sure its well dried from the post-garden rinse, or well drained if using frozen rhubarb). Dot top with butter.
3) Bake at 400F for 50-60 minutes. (At about 30 minutes, protect crust edges with foil or protector.
4) At 50 minutes test for doneness: (jiggle test first, if it jiggles, let it continue to cook) if no jiggle, test center with butter knife done when it comes out clean.

This is by far and away the best way to eat rhubarb. Its ridiculously easy and just a great balance of sweet and tart.
