Rhubarb Pie Recipe

1 unbaked pie crust
3 beaten eggs
1 ½ C sugar
¾ tsp freshly grated nutmeg
¼ C flour
4 C rhubarb (about 1” slices)
1 T cold butter

Directions:
Directions:
1) Form pie crust and set aside.
2) Beat eggs; combine sugar, nutmeg, & flour. Beat lightly into the eggs; stir in rhubarb (be sure it’s well dried from the post-garden rinse, or well drained if using frozen rhubarb). Dot top with butter.
3) Bake at 400ºF for 50-60 minutes. (At about 30 minutes, protect crust edges with foil or protector.
4) At 50 minutes test for doneness: (jiggle test first, if it jiggles, let it continue to cook) if no jiggle, test center with butter knife – done when it comes out clean.

This is by far and away the best way to eat rhubarb. It’s ridiculously easy and just a great balance of sweet and tart.
