Ingredients:  
Ingredients:  
6 medium - large potatoes
2 T butter or margarine
salt & pepper to taste
onion, chopped
1 cup cheese, shredded
cup sour cream

Directions:
Directions:
Peel and chop potatoes. Add onions, then add water to almost cover potatoes. Add salt and pepper to taste.
Cook until tender. Remove from heat. Drain water, add butter.
Beat on low with electric mixer. (I use a hand mixer.) Add evaporated milk, mix on medium with mixer. Add milk until desired consistency.

If using cheese or sour cream - add now as desired.
