Italian Stuffed Jalapeños Recipe

15 jalapeños
1 T canola oil
¼ c red onion, minced
¼ c red bell pepper, minced
3 T garlic, minced
2 lb mild italian sausage, casings removed
16 oz cream cheese, softened
¼ c parmesan cheese, grated
Salt and pepper
½ c mozzarella, shredded

Directions:
Directions:
Preheat oven to 300º. Slice jalapeños in half, lengthwise. Seed and devein. Place jalapeños on a cookie sheet and roast for 5 minutes. Remove from oven and let cool. Adjust oven temperature to 350º.

Heat oil in a medium sauté pan. Add onions, peppers, garlic and sausage. Cook for about 5 minutes or until sausage is cooked through. Remove from heat, add cream cheese and parmesan cheese. Season with salt and pepper. Stir to combine.

Place approximately 1 T of mixture in each jalapeño half, top with ½ tsp mozzarella cheese.

Place the cookie sheet of stuffed peppers in oven and bake for 5 minutes or until mozzarella melted, and warmed through.

Note: If making this ahead, refrigerate after filling and topping with cheese, then bake until warmed through.
