1/3 cup shortening
1 cups sugar
2 eggs, well beaten
1 cup canned pumpkin
1 tsp. vanilla
1 tsp. lemon extract
1 tsp. grated lemon rind
2 cups sifted flour
4 teaspoons baking powder
1 tsp. salt
tsp. ginger
tsp. allspice
1 tsp. nutmeg
1 tsp. cinnamon
1 cup raisins
1/3 cup chopped nuts

Directions:
Directions:
Preheat oven to 350 degrees. Cream shortening and sugar thoroughly. Add eggs, pumpkin, flavorings and lemon rind. Sift together flour, baking powder, salt and spices. Stir into creamed mixture. Add raisins and nuts. Mix well. Drop from teaspoon onto greased cookie sheet and bake 15 minutes. If desired, cinnamon/sugar mixture may be sprinkled over cookies before baking.
