Texas Caviar Recipe

1 can black beans, drained & rinsed
1 can white shoepeg corn, drained & rinsed
1 can black eyed peas, drained & rinsed
1 c. diced celery
1 green pepper, diced
6 green onions, chopped
1 c. oil
c. vinegar
c. sugar
tsp. salt & pepper

1. Drain & rinse the beans, corn & peas. Mix with celery, green pepper & green onions.
2. Mix oil, vinegar, sugar, salt & pepper in heavy saucepan. Boil to dissolve sugar, about 1 minute. Let cool.
3. Pour liquid mixture over vegetables. Let sit in refrigerator overnight. Drain.

Serve with Scoops or Fritos.
