2 cans (12oz each) chicken breasts
1 cup chopped onion
2 T. vegetaable oil
2 cans stewed tomatoes (I like Ro-tel with diced tomatoes and green chilies)
2 cans pinto beans drained
2/3 to 3/4 cup picante sauce (mild for you sissys or medium for a real Nichols)
1 tsp. chili powder

Cook onion in vegetable oil then add chicken,tomatoes, beans,picante sauce and chili powder. Simmer 20 min. Laddle in bowls and serve with sour cream, grated cheese avacado and corn chips.
This is one our familiy's favorite soup. It's great on a cold evening and so easy. Don't forget to serve it with the corn chips and think of us in Arizona where it doesn't get any colder than 50 degress in the winter. Enjoy!
