Ingredients: Shrimp: ½ lb. peeled and deveined medium-sized shrimp 1 egg ½ c. flour 1 Tbsp. seasoning salt 1½ c. sweetened, shredded coconut ⅓ c. panko breadcrumbs Coconut oil cooking spray
Pineapple dipping sauce: ½ can of crushed pineapple 16 oz. vanilla Greek yogurt

Directions:Shrimp: Preheat oven to 375° F. Mix egg in a small bowl. Mix flour and seasoning salt in another small bowl. Place shredded coconut in another small bowl and mix in bread crumbs. Coat shrimp in flour mixture, patting off excess. Coat shrimp in egg, patting off excess. Coat shrimp in coconut bread crumb mixture, pushing ingredients into shrimp. Place on a lined cookie sheet and repeat until all the shrimp are lined on the cookie sheet. Spray lightly with coconut oil cooking spray. Bake about 30 minutes or until golden brown and lightly crispy. Serve hot with pineapple dipping sauce.
Pineapple dipping sauce: Mix together crushed pineapple and yogurt. Sprinkle shredded coconut over the top as a garnish. Serve cold. |
