Ingredients:  
1 lb new potatoes (red), sliced to 1/3" (do not peel)
1 t salt
dash pepper
1 small onion, minced
1/2 lb mushrooms, sliced
3 T butter
1/2 C sour cream (room temperature)

Directions:
Directions:
Boil potatoes about 20 minutes. Drain. Add salt and pepper. Set aside. Saute onion and mushroom in butter in a large skillet. Add potatoes and sour cream. Cook 5 minutes. Turn gently as needed. Serve immediately.
