1 yellow cake mix
1 stick margarine, softened
1 can (14 oz) mandarin oranges, 1/2 cup of juice reserved
4 eggs
1 tsp vanilla
1 (4 oz) box vanilla instant pudding
1 can (20 oz) crushed pineapple, juice reserved
1/2 cup powdered sugar
4 oz whipped topping
Extra mandarin oranges, for garnish

Directions:
Preheat oven to 350º. Combine cake mix, margarine, 1/2 cup juice from oranges, eggs and vanilla. Beat 4 minutes on medium-high speed. Add drained oranges and beat until pieces are broken up and small. Pour batter into 9x13 inch baking dish that has been greased and floured or 2 - 8 inch round pans. Bake 25 to 30 minutes for 9x13 pan or 17-21 minutes for round pans. Top should be lightly browned and set. Remove from oven and cool.

Once cake is cool, blend juice from pineapples with the vanilla pudding mix. Add powdered sugar and mix, then mix in whipped topping. Stir in drained pineapple. Spread on cool cake and refrigerate for several hours.
