¾ c. Butter
⅓ c. Confectioners’ sugar
4 eggs
2 c. Sugar
¼ tsp. Salt
5 Tbsp. Lemon juice
1 tsp. Grated lemon rind
¼ c. Flour
1 tsp. Baking powder
Sifted confectioners’ sugar
Directions:
Directions:
Blend first 3 ingredients. Press evenly into a 9x13” baking pan. Bake in a 350º F oven 20 minutes. Beat remaining ingredients until light and fluffy. Pour over hot crust; bake until no imprint remains when lightly touched (about 25 minutes). Cool, cut into squares. Sprinkle with confectioners’ sugar.
