8 oz Greek feta cheese
2 Tbsp heavy cream
1/2 cup pitted kalamata olives
1 medium cucumber, seeded and very thinly sliced
1 small red onion, very thinly sliced or chopped
2 Tbsp granulated sugar
1 tsp kosher salt
1/2 cup apple cider vinegar
1 ciabatta loaf, cut into 1/2 " thinkc slices
2 Tbsp olive oil, divided
1 Tbsp chopped fresh basil

Preheat oven to 350
Combine feta and cream in a cuisinart and mix until smooth. Set aside.
Spread olives on a rimmed baking sheet and bake until olives are dry and slightly crispy, about 30 minutes.
Cool completely. Roughly chop olives and set aside.
Meanwhile toss together cucumber, onion, sugar and salt in a medium bowl. Add vinegar and let sit for 20 minutes.
Increase oven heat to 450. Rub bread slices evenly with 1 Tbsp oil. Place them on a wire rack on a gbaking sheet. Bake until the edges are golden and bread is toasted...about 10 minutes.
Spread feta mixture evenly on toast slices. Using a slotted spoon, place about 1 Tbsp cucumer mixture on each slice Top with olives, remaining oil and sprinkle with chopped basil.
